The Cove at Atlantis

Paradise Island Lighthouse at the entrance to Nassau Harbour.

The Cove opened on March 28, 2007, as the all-suite hotel within Atlantis in the Bahamas, with interiors by Jeffrey Beers International and Hirsch Bedner Associates. It is now in the middle of a full renovation of all 600 suites, the pool and the public spaces, and it stays open until the finished hotel is unveiled in 2027, its twentieth anniversary. Food is the reason to come. FISH by José Andrés, opened in April 2018, is the flagship. Whole fried lionfish is on the menu, an invasive species Andrés spearfishes to spare the reef, with part of the proceeds going to the Blue Project Foundation, and dishes come from Josper ovens in a room by Capella Garcia, with murals by the Bahamian artist Elena Kalis. Paranza, opened by Michael White on August 1, 2023, takes its name from a small Italian fishing boat and serves handmade pasta and crudo beside a temperature-controlled wall of red wine. The renovation adds a beachfront restaurant built around local seafood and open-fire cooking. Each April the Nassau Wine & Food Festival comes to Atlantis; the next runs from April 14 to 18, 2027.
