Grace Hotel sits high on the caldera cliffs at Imerovigli, about 15 minutes from Oia, and steps down a terraced hillside towards the Aegean. The design is Cycladic and modern at once: white walls, clean lines and very little ornament, so that the view does the work. All 23 rooms, suites and the villa face the caldera and the sunset, and most rooms have a plunge pool, with private terraces from the junior suites upwards. At the top of the range is a three-bedroom villa that works almost as a small hotel of its own. The centre of the hotel is a 22-metre heated infinity pool. Below it, Varoulko Santorini is run by Lefteris Lazarou, whose Athens restaurant holds a MICHELIN star, and the menu draws on Greek cooking traditions and island produce; the 363 Bar next door is the place for a sunset drink. There is also a fitness centre and a yoga and Pilates studio. The hotel can arrange boat trips and flights over the island. It opens from April to October and does not take children under 14.

Why I choose it We choose Grace for a calm, adult stay on the caldera, away from the crowds of Oia, with a large pool and one of the island's serious restaurants.
