The Vines Resort & Spa sits at the foot of the Andes in Los Chacayes, near Tunuyán, in the heart of the Uco Valley, Argentina's most celebrated wine region. It is surrounded by about 1,500 acres of vineyards belonging to The Vines of Mendoza, and the mountains fill the view across 180 degrees. Guests stay in 21 villas with one or two bedrooms, each with a large deck and kitchenette; the larger ones add fireplaces, outdoor showers, plunge pools or roof terraces. Food is the other great draw. Siete Fuegos, the restaurant of the Argentine chef Francis Mallmann, cooks over open fire in several traditional ways. Wine is woven into every day: there is a winery and tasting room, and guests can join in harvesting and blending, with the help of the resort's winemakers. Resident gauchos act as guides, sommeliers and hosts, and lead rides on horseback. There is also an infinity pool, a spa, bicycles and bocce. Children aged 12 and over are welcome, and Mendoza's airport is about 90 minutes by road.

Why I choose it It is the Uco Valley stay we recommend for wine lovers, combining Mallmann's cooking, real vineyard work and the full sweep of the Andes.
