Le Couvent des Minimes occupies a 17th-century convent on the edge of Mane, a village in the Alpes-de-Haute-Provence. L'Occitane, whose products are made nearby in Manosque, first opened it as a hotel in May 2008, and after more than two years of work it reopened in 2023 with pared-back, organic modern interiors set inside the old walls. The Spa L'Occitane en Provence covers 2,500 square metres, with an indoor pool, yoga room, Turkish bath, sauna and gym, and it was the first spa certified as a Sustainable Wellbeing Center. Pilates, yoga and sound relaxation classes run alongside the treatments. Outside, there is an outdoor pool with the Galinette bar and paths out into the Provençal hills. Le Feuillée, the gastronomic restaurant, is named after Louis XIV's botanist; chef Louis Gachet, Meilleur Ouvrier de France in 2023, cooks between his native Burgundy and Provence with an inventive hand and fine sauces, and holds a one-MICHELIN-star rating. Pamparigouste is the bistro and Alambic the bar. A Relais & Châteaux member with 49 rooms and suites, it was raised to three MICHELIN Keys in 2026.
