Traube Tonbach traces its origins to 1789, when Tobias Finkbeiner opened a tavern for forest workers in the Tonbach valley above Baiersbronn, and the Finkbeiner family has run it ever since; Heiner Finkbeiner, of the seventh generation, took charge in 1993. On January 5, 2020, fire destroyed the original building that held its restaurants. The kitchens carried on in a temporary pavilion on the roof of the car park, and a new house of warm wood, calm natural colours and window walls rising to the roof peak opened on April 8, 2022. The Schwarzwaldstube, opened in 1977 and given its third star in 1992 under Harald Wohlfahrt, has been led since 2017 by Torsten Michel, who has kept its three-MICHELIN-star rating with cooking that balances modern and classical technique around exceptional ingredients. Next door, 1789, the former Köhlerstube, holds a one-MICHELIN-star rating under Florian Stolte, whose spare six-course menus carry Asian accents. Rooms open onto balconies or terraces over meadows and old trees, and the spa has three pools and nine treatment rooms for recovery between long lunches. There are 153 rooms and suites.

Why I choose it Two starred kitchens, one of them the three-star Schwarzwaldstube, in a family house that has fed the Black Forest since 1789.
