CERVO sits on the edge of Zermatt at the foot of the Matterhorn, at the end of a ski run, and its design comes from the Bavarian studio Dreimeta. There are 54 rooms and suites spread across seven lodges in the grounds, in three styles: Nomad rooms for a simple base, Alpinist rooms with Hästens beds and Matterhorn views, and the Huntsman Lodge, which can be taken whole with private catering. The Overlook Lodge nearby holds five serviced flats, from studios to three-bedroom penthouses. Food is a big part of the place. The Bazaar takes its cue from the markets of the Middle East, Madre Nostra cooks Italian, and Ferdinand serves fondue and raclette made with Swiss produce. The Atman Mountain Spa borrows from Japanese onsen, Bhutanese hot-stone baths and Nordic sauna, and there are daily yoga, Pilates and meditation sessions. In winter the après-ski on the terrace starts at three in the afternoon, and in summer the trails begin at the door.

Insider tip Ski down to the door for the après-ski, which starts at three, then book the Grapes & Juniper Bar hidden in the cellar vaults for later.
Why I choose it It is Zermatt with a younger, warmer spirit, with ski-in access, a serious spa and three very different restaurants without leaving the grounds.
