Jackalope takes its name from the horned rabbit of folklore, and the hotel leans into the myth. It sits among 28 acres of vines at Merricks North on Victoria's Mornington Peninsula, with a 30-metre black infinity pool looking over the vineyard. The 44 rooms face either east, with private terraces over the landscape, or west over the vines towards the sunset. All have heated floors, Zuster furniture, rain showers and Tom Dixon amenities, and many have a deep Japanese stone bath. Two Lair suites add a double-sided indoor and outdoor fireplace and a 30-square-metre terrace. Corridors glow, the wine cellar is cased in glass, and contemporary art is placed across the estate. The original 1876 homestead now holds Flaggerdoot, a clubby bar, and Doot Doot Doot, the restaurant, cooks with producers from around the peninsula under a chandelier of 10,000 bulbs. There is a spa, and the hotel runs regular events, from wine pairings and mindfulness retreats to a black-truffle hunt with dinner. Guests must be 12 or older, and the hotel is open all year.
