Fairmont Waterfront opened in July 1991, linked to the Canada Place cruise terminal and a short walk from Gastown and the Stanley Park Seawall. Its bees arrived in 2008. Three rooftop hives now produce around 200 pounds of honey a year, joined by an observation hive and, since 2015, the Bee and Bee pollinator hotel, while a 2,100-square-foot rooftop herb garden supplies ARC Restaurant + Bar. Green Key Global rates it at five keys, the highest level, and single-use plastics left the guest rooms in 2022, replaced by filtered water stations on every floor, full-size Le Labo amenities and wooden key cards. Surplus food goes to Vancouver Food Runners and La Tablée des Chefs, and the hotel was an original member of Ocean Wise and a founding signatory of the Plastic Wise Pledge. A redesign by CAMDI of Montreal, in coastal blues, greens and greys, runs through 2029, and the first 96 rooms, on the top four floors, are finished. There is a heated rooftop pool, and cruise guests can have their luggage sent to the ship.

Why I choose it A five-key Green Key hotel beside the cruise terminal, and a natural first night before an Alaska voyage.
